SAN JOSÉ DEL CABO, Mexico — Organizers in the resort city of San José del Cabo are preparing for an ambitious culinary spectacle this Saturday, when hundreds of chefs, volunteers and seafood enthusiasts will attempt to set a Guinness World Record for the longest sashimi line ever assembled.
The event, promoted by Jesús Montaño, founder of the Sashimi FEST Los Cabos, aims to place the Baja California Sur destination on the global culinary map with what organizers describe as the largest continuous sashimi presentation in the world.
During a press conference announcing the final preparations, Montaño said the idea of pursuing a Guinness World Record dates back to 2018, but the effort required years of planning and coordination.
“After many years of dreaming about this, we are finally just hours away from attempting to place San José del Cabo on the world stage,” Montaño said.
According to organizers, official Guinness World Records adjudicators have already arrived in Los Cabos to supervise the attempt and verify that the requirements are met.
The record attempt has the backing of the Los Cabos municipal government, and organizers say preparations have been underway for more than six months.
Teams are currently assembling 28,000 individual sashimi portions, which will form part of an unprecedented culinary display stretching through the historic downtown streets of San José del Cabo.
The project involves 620 tables arranged along a route measuring approximately 1.2 kilometers (about three-quarters of a mile) through the city’s historic district, creating a continuous presentation of sashimi intended to break the current global record.
The initiative has drawn support from multiple sectors of the local community, including members of the CROC labor union, local restaurateurs and internationally recognized chefs.
Among the participants is Chef Carlos Gaytán, the Michelin-recognized Mexican chef whose restaurants have earned global acclaim, as well as Spanish-language rock singer Ricky Luis, who joined organizers during the press conference to promote the event.
The sashimi featured in the attempt is a regional specialty known locally as “Sashimi Panguero,” a style inspired by the fishing traditions of Baja California Sur and commonly prepared with freshly caught seafood from the waters of the Gulf of California and the Pacific Ocean.
If successful, organizers say the event will not only set a new culinary benchmark but also highlight the rich maritime culture and gastronomy of Los Cabos, a destination already known internationally for its seafood cuisine and sport fishing industry.
Local officials expect the attempt to draw thousands of residents and visitors, turning the historic center of San José del Cabo into a massive open-air culinary stage celebrating the region’s coastal heritage.
